Homemade Banana Pudding

I love banana pudding! I never really know how much I loved it until I grew up, but the layers of Nilla wafers, bananas, whipped cream, and pudding make a great texture and flavor.

These are easy to make, first make the pudding, assemble the layers, and let sit in the refrigerator. The Nilla wafers absorb some of the pudding and make a cake like texture. Enjoy this chilled, straight our of the refrigerator!

Homemade Banana Pudding

A sweet, tasty banana budding with vanilla wafers.

Ingredients

For the vanilla pudding

  • 1/4 cup granulated sugar
  • 2 tbsp all purpose flour
  • a pinch salt
  • 1 cup whole milk
  • 1 tbsp vanilla bean paste or vanilla extract
  • 1 large egg
  • 1 egg yolk

For the whipped cream

  • 2 cups heavy whipping cream cold
  • 1/4 cup granulated sugar
  • 2 tsp vanilla extract

For the banana pudding

  • 40 Nilla Wafers
  • 3 large bananas cut into 1/2″ discs
  • Extra Nilla Wafers broken into pieces

Instructions

For the vanilla pudding

  • Add sugar, flour, salt, and milk into a saucepan and heat over medium low on the stove, stirring the whole time. Once the mixture starts to thicken, stir in the vanilla bean paste or extract and cook for another 2-3 minutes. Keep stirring it so that the bottom doesn’t burn and a skin doesn’t form on top. Take it off the heat when done.
  • In a heat safe bowl, whisk the egg and egg yolk together. Add 3 tablespoons of the mixture in the saucepan to the eggs and whisk together to temper them. Add the eggs back into the saucepan and return it to medium low heat on the stove. Continue mixing for 3-5 minutes until the egg is fully cooked and the pudding is thick.
  • Once cooked, remove from the stove. Optionally, run the pudding through a fine mesh strainer to make a smoother pudding. Place the pudding in an ice bath to cool down and store in the refrigerator until ready to use.

For the whipped cream

  • In a chilled bowl, add in the cold whipped cream, sugar, and vanilla extract. Whip together using a stand or hand mixer until stiff peak form.
  • Take half of the whipped cream and fold it into the chilled vanilla pudding.

To assemble

  • In an 8×8 pan or dish, lay Nilla Wafers on the bottom. Play a layer of banana slices on top. Take half of the vanilla pudding mixture, place it on top, and smooth out the layer. Add half of the whipped cream and smooth it out on top. Repeat all the steps using the Nilla Wafers, bananas, pudding, and whipped cream. Top with crushed Nilla Wafers.
  • Cover with plastic wrap and place in the refrigerator for 3 hours or overnight. Serve chilled in individual bowls. Enjoy!
